Jean-François Houdré, the Executive Pastry Chef at the Westin St. Francis, has the unique job each year of constructing an enormous holiday sugar castle for display in the hotel lobby. This ain't no slap-dash Hansel and Gretel affair. Each "building" in the display takes eight to ten hours to make. The windows are made out of sugar. Bricks are made individually out of sugar and then mortared together to form brick facades. Houdré essentially handed himself this laborious task years ago, when his children issued him the challenge of making a confectioner's replica of the castles they were visiting during a trip to the south of France. This year, Houdré's sugar castle features miniature replicas of real-life "newsmakers" of 2012. Stop by the Westin St. Francis the next time you find yourself in Union Square, and see if you can identify the people populating Houdré's masterpiece. As depictions of holiday cheer go, this one is particularly sugar-coated. Har har.
